Tom Douglas shares how to make the perfect BBQ steak

It's the perfect weather for grilling.  Chef Tom Douglas gets cooking on the KING 5 deck to share how to get that perfect barbecue steak.


Tom’s Traditional American Barbecue Sauce/ Tom Douglas (from Tom Douglas’ Seattle Kitchen)
Yields 2 cups

½ cup minced onion
½ teaspoon minced garlic
2 tablespoons peanut or vegetable oil
1 2/3 cups canned whole tomatoes with their juice (one 14.5 ounce can of tomatoes, with all the tomatoes and all the juice)
1 red bell pepper, roasted, peeled, and seeded
¼ cup fresh orange juice
¼ cup balsamic vinegar
¼ cup ketchup
3 tablespoons packed brown sugar
2 tablespoons Dijon mustard
1 teaspoon Worcestershire
1 teaspoon molasses
¾ teaspoon cumin seed, toasted and ground
¼ teaspoon cinnamon
a pinch of ground clove
red pepper flakes to taste
Kosher salt and freshly ground black pepper

In a saucepan, sauté the onion and garlic in oil for 2 minutes.  In a food processor, puree the sauteed onion and garlic with the tomatoes and roasted pepper.  Return the puree to the saucepan and add the orange juice, balsamic vinegar, ketchup, brown sugar, Dijon mustard, Worcestershire sauce, molasses, cumin, cinnamon, and clove.  Slowly simmer for 20 to 25 minutes, until it is as thick as you like it.   Remove from the heat.  Season to taste with red pepper flakes, salt, and pepper.
