King Salmon with Blackberry Glaze

From McCormick & Schmick's Seafood Restaurant

2 7-ounce King Salmon filet

Salt and Pepper

1 cup Roasted Summer Potatoes (recipe below)

6 ounces broccolini

1/2 cup Blackberry Glaze (recipe below)

3 blackberries

Lemon wedge

Micro greens, to garnish

Season and grill salmon over medium-high heat until just cooked. Place hot roasted potatoes and broccolini in center of plate and top with hot salmon. Drizzle blackberry glaze around plate and squeeze fresh lemon on top of salmon. Garnish with blackberries and micro greens.

Makes 2 servings

Roasted Summer Potatoes

4 tablespoons butter

2 cups small potatoes, blanched and sliced lengthwise

2 teaspoons tri-colored bell pepper, diced

Pinch of oregano, parsley and thyme

Pinch of chili flakes

1/2 cup watercress

2-3 sun-dried tomatoes

Salt and pepper, to taste

Preheat saut pan over medium-high heat. Add butter and potatoes; cook until hot and lightly brown. Add herbs, bell peppers and chili flakes. Cook for 1 minute. Add watercress and toss. Lightly toss in tomatoes and season with salt and pepper. Makes 2 servings.

Blackberry Glaze

2 cups fresh blackberries

1 cup red wine

1 teaspoon sugar

2 tablespoons balsamic vinegar

Add all ingredients to sauce pot and cook over medium-high heat. Cook until reduced by two-thirds. Refrigerate unused sauce.
